THE COMPANY During the 50's Francesco Serio set up the company bearing his name, to process and preserve anchovies. In 1979, in order to cope with the requirements of modernization and expansion, the company was turned into a capital company and took its present name "Pesce Azzurro Cefalù, s.r.l. Today the company is a leader in the fish processing and preserving industry. At first the company produced only salted anchovies fished in our seas and supplied them to the biggest Italian companies. During the 80's, to respond to the demands of a larger market, we enlarged our production, including a wider range of products, such as anchovy fillets in oil. Furthermore, we decided to entrust the distribution of our products to one of the biggest international distributers "Zanotti", today the leading company in this field. Our factory is located near the fishing port of Cefalù (Sicily). The processing and preserving of our products is entirely by hand, by skilful and expert workers in accordence with the most ancient Sicilian traditions, handed down by local fishermen since ancient times. This permits even today the retention of the flavours and tastes of the old mediterranean recipes. The desire to satisfy consumers' tastes has led us to widen the range of the products offered. We now produce tuna fish in olive oil and tuna in brine, Ventresca of tuna, anchovy fillets in olive oil, red chilly-,parsley-, oregano-, or caper-flavoured anchovy fillets. Our last product, which has met widespread approval among our customers, are the Mediterranean-flavoured anchovy fillets, a mix of red chilly, capers and oregano. We also produce a brand new range of products, anchovy fillets in organic extra virgin olive oil. The oil is produced by farming methods free of pesticides and chemical fertilizers to ensure a healthy and envoronmentally friendly product. Our products range from anchovy paste, clams in water or in sauce, mackerel in olive oil, mussels in water, seafood salad, ready-made sauces, to a wide range of new products such as: pickled anchovies, mackerel, shrimps, squid, cuttlefish, surimi, kippers, stuffed fish pieces. Our products are preserved in tins or jars of different sizes and are marketed under several trade marks such as: Antica Lavorazione Artigiana, Refiletto, Consorzio Conserviero Siciliano, I Mari del Sud" or under the trade mark of other important Italian or foreign industries. At the moment we export our products to Australia, Japan, Great Britain, Slovakia, Cyprus and the United States. Our aim in running our business is to keep to one over-riding principle: quality, and this caracterises all the phases of the production, from the rigorous selection of the raw material to strict controls during the processing of the fish. Our factory has at its disposal a laboratory for quality control run by a biologist abiding by strict standards of hygiene. Our laboratory is constantly collaborating with the Experimental Station in Parma in order to improve the quality of our products. OUR SPECIALTIES Grated Bottarga (tuna roe) This high quality"Bottarga" is obtained from the traditional processing of tuna roes: first washed and then salted with sea salt, they are hung to dry for 30/40 days in the sea air and under the hot Sicilian sun. The tastiness of this natural food lies mainly on the quality of the fish, the skilfulness of the hand that salted it down and on the softness of the open air drying process. Anchovy drops This is a high quality seasoning obtained from the "dripping" of previously pickled anchovies, left to drip, drop after drop; an amber-coloured liquid is collected which preserves all the smells and flavours of the sea. It is a healthy and easily-digestible seasoning suited to season pasta, salads and vegetables.
